Peanut & Dried Chilles Condiment


(Inspired by the Szechuan Peanut condiment) Deep fry a packet of ground peanuts (about 400-500gm), till golden brown & drain them from the oil.
6-8 dried chillies wash & cut into strips. Fry the chillies in 1 tbsp of sesame oil for about 2 mins, then add the fried peanuts, fry them for about 3 mins. Turn off the gas, add 1 t
sp of coarsely pounded black pepper, 1tsp salt & 1 tsp sugar.

Great for winter cold weathers with warm rice! Or a bowl of Maggi Noodles!

Sambal Ikan Bilis

What do you do to leftover ikan bilis (dried anchovies)?
You turn it into a condiment sambal ikan bilis with green chillies (thanks to Fairani of Perfect Frosting for the inspiration). Ingredients 6 tbsp fried ikan bilis/anchovies (mine wasn't crispy, leftover from yesterday's dinner), 6 green chilli padi & 2 lime kasturi. Pound anchovies with chillies till semi fine, squeeze the lime juice. Eat with steamy hot rice...;}} & now I realize I am a kitchen sink cook...cook anything in the kitchen/fridge.

Sambal Belacan


Sambal Belacan (My version)

4-5 red chillies (cut into 3-4parts)
6 red chilli padis
1 cube of ABC Terasi Udang (basically it is 5g of shrimp paste belacan & from most Oriental shops)
5 red shallots

Above ingredients to fry at low heat with a little oil, till chillies a little soft. Pound or blend with 1 tspn sugar & a pinch of salt. Serve with juice of 2 lime kalamansi or 2 slices of lemon.
